Villa del Palmar at the Islands of Loreto, a luxury resort in the quaint Baja town of Loreto, Mexico is enjoying the fruits of their labor and offering a farm to table experience for their guests at the same time. The Mexico eco resort has been practicing sustainable gardening methods for the past six years, growing a mix of vegetables, fruits, and aromatic herbs. The garden is just one of the many initiatives the resort has in place to keep their ecological footprint to a minimum, and its impact is simply delicious.
Sustainable Gardening in Loreto
As part of their mission to reduce their ecological footprint as much as possible, the resort set aside a piece of land for their sustainable gardening initiative. The garden, which takes up 72 square meters of the resort’s property, is tended to by Francisco Javier Murillo, who ensures that the garden is taken care of and that the organic composting used to feed the garden, another of the resort’s ecological initiatives, is done correctly. Under his guidance, more than 25 different crops flourish at the resort and the bounty is mouthwatering.
What’s Grown in the Garden
The gardeners at Villa del Palmar have successfully grown a variety of vegetables, fruits, and aromatic herbs, all of which is used in the fresh cuisine and beverages served at the resort. From salads to margaritas, guests can expect to find what is grown at the resort in their day to day meals.
Vegetables: Spinach, Beets, Radishes, Cilantro, Epazote, Variety of Chilies, Cambray Onions, Chives, Squash.
Fruits: Watermelon, Canteloup, Cherry Tomatoes, Saladette Tomatoes, Olive, Orange tree, Pomegranate, Mango, Cucumber.
Aromatic Herbs: Basil, Lavender, Rue, Rosemary, Peppermint, Mint, Thyme, Oregano.
